Daddy's Carrot Cake

Daddy's Carrot cake with cream cheese frosting

Elmo for Evan

This was a fun cake, who doesn't love Elmo! This cake also proved to be the first of it's kind. Poor Evan got terribly sick the day before his birthday party and the party was postponed for a few weeks. The cake was completely done when I received the call. So, we placed the cake in its box, wrapped the box with saran wrap and froze it. Two days before the party, it was taken from the freezer. Left wrapped in the saran wrap it was allowed to defrost until the day of the party. Then unwrapped and served. The icing held up and the cake was extra moist. Freezing cakes, typically cakes that are not frosted, is a trick that a lot of bakeries use to keep their cakes moist and keep up with the demand.
